Method
 

  1. Preheat the oven to 450°F (232°C). Line a baking sheet with parchment paper and lightly grease it.
  2. In a large bowl, whisk together the flour, water, garlic powder, onion powder, smoked paprika, salt, and black pepper until smooth.
  3. Add the cauliflower florets to the batter and toss until evenly coated. Let any excess batter drip off, then arrange the florets in a single layer on the prepared baking sheet.
  4. Bake for 20 minutes, flipping halfway through, until the coating is set and lightly golden.
  5. While the cauliflower bakes, mix the buffalo sauce with the melted butter or oil in a large bowl.
  6. Remove the cauliflower from the oven and toss it gently in the buffalo sauce mixture until fully coated.
  7. Return the coated cauliflower to the baking sheet and bake for 10 to 15 more minutes, until crisp at the edges and the sauce is slightly sticky.
  8. Serve hot with ranch or blue cheese dressing and celery or carrot sticks, if desired.
