- Preheat the oven to 450°F (232°C). Line a baking sheet with parchment paper and lightly grease it.
- In a large bowl, whisk together the flour, water, garlic powder, onion powder, smoked paprika, salt, and black pepper until smooth.
- Add the cauliflower florets to the batter and toss until evenly coated. Let any excess batter drip off, then arrange the florets in a single layer on the prepared baking sheet.
- Bake for 20 minutes, flipping halfway through, until the coating is set and lightly golden.
- While the cauliflower bakes, mix the buffalo sauce with the melted butter or oil in a large bowl.
- Remove the cauliflower from the oven and toss it gently in the buffalo sauce mixture until fully coated.
- Return the coated cauliflower to the baking sheet and bake for 10 to 15 more minutes, until crisp at the edges and the sauce is slightly sticky.
- Serve hot with ranch or blue cheese dressing and celery or carrot sticks, if desired.
Notes
For extra crispiness, make sure the cauliflower is arranged in a single layer and avoid overcrowding the baking sheet. Serve immediately for the best texture.
