  • 1 lb fresh asparagus, trimmed
  • 1 cup panko breadcrumbs
  • 1/2 cup all-purpose flour
  • 1/2 cup unsweetened soy milk or plant-based milk of choice
  • 1 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
  • 2 tablespoons nutritional yeast
  • Salt and pepper to taste
  • Olive oil spray

Method
 

  1. Wash and dry the asparagus thoroughly; trim the woody ends.
  2. Set up three shallow bowls with flour mixed with half of the salt and pepper, plant-based milk, and a mixture of panko, nutritional yeast, garlic powder, and smoked paprika.
  3. Coat asparagus in the flour, then dip in the soy milk, and finally press into the panko mixture.
  4. Preheat the air fryer to 390°F (200°C) and arrange the coated spears in a single layer in the basket.
  5. Lightly spray with olive oil and cook for 7 to 9 minutes, shaking halfway through.
  6. Serve immediately.
