- Place eggs in a saucepan, cover with water, and boil.

- Prepare an ice bath in a large bowl.
- Transfer eggs to the ice bath for 10 minutes.
- Gently crack and peel the eggs under running water.
- Cut eggs in half and place yolks in a mixing bowl.
- Mash yolks and mix with yogurt, mustard, vinegar, salt, and pepper until creamy.
- Pipe the mixture back into egg whites.
- Garnish with paprika and chives, then serve.
Notes
Use a teaspoon of baking soda or vinegar in boiling water to make peeling easier. Assemble shortly before serving for freshness.
