- Bloom the gelatin by pouring 1/2 cup of cold water into a heat-safe measuring cup or small bowl and sprinkling the gelatin over the surface. Let sit for 5-10 minutes.
- Heat the remaining 1/2 cup of water in a small saucepan until it reaches a gentle simmer.
- Remove the saucepan from heat and add the bloomed gelatin, whisking until fully dissolved.
- Combine the dissolved gelatin with the fresh fruit puree, sugar-free sweetener, vanilla extract, and pink Himalayan salt in a larger bowl. Whisk thoroughly.
- Pour the mixture into individual serving dishes or ramekins.
- Chill in the refrigerator for at least 2-4 hours until set.
- Serve chilled.
Notes
Ensure to strain the fruit puree for a smooth consistency. Store in airtight containers in the refrigerator and consume within 3-5 days.
