Method
- Bloom the gelatin by pouring 1/2 cup of cold water into mixing bowl and sprinkling the gelatin over it. Let sit for 5-10 minutes.
- Heat 1.5 cups of fruit juice in a saucepan over medium-low heat, avoiding boiling.
- Pour the hot juice over the bloomed gelatin and whisk continuously until fully dissolved.
- Stir in the remaining cold juice and optional sweeteners and extracts. Adjust sweetness as necessary.
- Pour the mixture into serving molds or dishes, adding fresh fruit if desired.
- Chill in the refrigerator for 4-6 hours or overnight until set.
Notes
Store in airtight containers in the refrigerator for up to 5-7 days. Avoid freezing for best texture.
