Ingredients
  

  • 1/2 cup cold filtered water
  • 1.5 cups unsweetened fruit juice (cranberry, pomegranate, or apple)
  • 2 tbsp unflavored gelatin powder
  • Liquid stevia or monk fruit sweetener (optional)
  • Fresh berries or finely diced fruit (optional, for later stages)
  • Flavor extracts (optional)

Method
 

  1. Bloom the gelatin by pouring 1/2 cup of cold water into mixing bowl and sprinkling the gelatin over it. Let sit for 5-10 minutes.
  2. Heat 1.5 cups of fruit juice in a saucepan over medium-low heat, avoiding boiling.
  3. Pour the hot juice over the bloomed gelatin and whisk continuously until fully dissolved.
  4. Stir in the remaining cold juice and optional sweeteners and extracts. Adjust sweetness as necessary.
  5. Pour the mixture into serving molds or dishes, adding fresh fruit if desired.
  6. Chill in the refrigerator for 4-6 hours or overnight until set.

Notes

Store in airtight containers in the refrigerator for up to 5-7 days. Avoid freezing for best texture.
