Ingredients
  

  • 1 ½ cups boiling water
  • 2 packets (0.3 oz each) unflavored gelatin powder
  • ½ cup cold water
  • 1 ½ cups sugar-free fruit juice (e.g. cranberry, apple, grape, cherry)
  • ½ cup protein powder (unflavored or vanilla, bariatric-friendly)
  • Optional: 1-2 tablespoons sugar substitute (e.g. erythritol, stevia)
  • Optional: ¼ teaspoon pure vanilla extract or other flavor extracts (e.g. almond, lemon)

Method
 

  1. In a heat-proof mixing bowl, pour the ½ cup of cold water. Sprinkle the unflavored gelatin powder evenly over the cold water and let it sit for 5-10 minutes.
  2. Meanwhile, bring 1 ½ cups of water to a rolling boil in a medium saucepan. Pour the boiling water over the bloomed gelatin mixture and whisk continuously until fully dissolved.
  3. Add the 1 ½ cups of sugar-free fruit juice to the dissolved gelatin mixture and stir to combine. Optionally, add sugar substitute or flavor extracts.
  4. Gradually whisk in the ½ cup of protein powder until fully incorporated and the mixture is smooth.
  5. Pour the mixture into an 8x8 inch baking dish or individual ramekins and chill in the refrigerator for at least 4-6 hours until set.
  6. Once set, cut into squares or serve directly from ramekins.

Notes

Store tightly covered in the refrigerator for 5-7 days. Not suitable for freezing.
