Method
- In a heat-proof mixing bowl, pour the ½ cup of cold water. Sprinkle the unflavored gelatin powder evenly over the cold water and let it sit for 5-10 minutes.
- Meanwhile, bring 1 ½ cups of water to a rolling boil in a medium saucepan. Pour the boiling water over the bloomed gelatin mixture and whisk continuously until fully dissolved.
- Add the 1 ½ cups of sugar-free fruit juice to the dissolved gelatin mixture and stir to combine. Optionally, add sugar substitute or flavor extracts.
- Gradually whisk in the ½ cup of protein powder until fully incorporated and the mixture is smooth.
- Pour the mixture into an 8x8 inch baking dish or individual ramekins and chill in the refrigerator for at least 4-6 hours until set.
- Once set, cut into squares or serve directly from ramekins.
Notes
Store tightly covered in the refrigerator for 5-7 days. Not suitable for freezing.
