- If using wooden skewers, soak them in water for at least 20 minutes to prevent burning.
- In a large bowl, combine the chicken pieces with olive oil, garlic powder, paprika, salt, and black pepper. Toss until evenly coated.
- Thread the seasoned chicken onto the skewers, leaving a little space between pieces for even cooking.
- In a small bowl, whisk together the mayonnaise, Thai sweet chili sauce, sriracha, honey, and lime juice until smooth. Set aside half of the sauce for serving.
- Preheat a grill or grill pan to medium-high heat. Lightly oil the grates if needed.
- Cook the skewers for 10 to 12 minutes, turning every 2 to 3 minutes, until the chicken is browned and reaches an internal temperature of 165 degrees F.
- During the last 1 to 2 minutes of cooking, brush the skewers with some of the sauce, if desired, for extra flavor.
- Transfer the skewers to a serving plate and drizzle with the reserved sauce. Garnish with cilantro, green onions, and sesame seeds if using.
- Serve immediately.
Notes
For the best flavor, marinate the chicken in the seasoning for 15 to 30 minutes before grilling if you have time. If using metal skewers, no soaking is needed.
