  • 1/2 cup unsalted butter
  • 2 overripe bananas
  • 1 cup light brown sugar
  • 1 large egg
  • 1 tablespoon vanilla bean paste
  • 1 1/4 cups all-purpose flour
  • 1/2 teaspoon sea salt
  • 1 teaspoon ground cinnamo
  • 1 cup dark chocolate chunks
  • 1/2 cup walnuts (optional)

Method
 

  1. Preheat your oven to 350°F (175°C) and line an 8x8 metal pan with parchment paper.
  2. Melt the butter in a light-colored saucepan over medium heat until it turns golden brown and smells nutty.
  3. Mash the overripe bananas in a large mixing bowl until smooth.
  4. Pour the hot browned butter over the bananas and whisk in the brown sugar until glossy.
  5. Add the egg and vanilla bean paste, whisking vigorously for 60 seconds.
  6. Sift the flour, cinnamon, and sea salt into the bowl and fold until just combined.
  7. Gently fold in the dark chocolate chunks and toasted walnuts.
  8. Spread the batter in the prepared pan and bake for 25 to 30 minutes until the edges are firm but the center is slightly soft.
  9. Let the bars cool completely in the pan before cutting.

Notes

This recipe can be adapted to be vegan by using vegan butter and a flax egg. Ensure to prep overripe bananas properly for the best results.
