  • 1 ½ cups all-purpose flour
  • ½ cup granulated sugar
  • 2 teaspoons baking powder
  • ¼ teaspoon salt
  • ½ cup milk
  • 1 large egg
  • ¼ cup melted unsalted butter
  • 1 teaspoon pure vanilla extract
  • ¾ cup fresh strawberries, finely diced
  • 1 cup powdered sugar
  • 2-3 tablespoons strawberry puree
  • ½ teaspoon pure vanilla extract (optional)

Method
 

  1. Preheat your oven to 350°F (175°C) and lightly grease a donut baking pan.
  2. In a mixing bowl, whisk together the flour, sugar, baking powder, and salt.
  3. In another bowl, whisk together the milk, egg, melted butter, and vanilla extract until smooth.
  4. Combine wet and dry ingredients, being careful not to overmix.
  5. Fold in the diced strawberries gently.
  6. Fill each donut cavity about two-thirds full with batter.
  7. Bake for 10-12 minutes until golden brown and a toothpick comes out clean.
  8. Cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
  9. Prepare the glaze by whisking the powdered sugar with the strawberry puree and optional vanilla extract until smooth.
  10. Dip the cooled donuts in the glaze and let set before serving.

Ensure strawberries are finely diced and avoid overmixing the batter to maintain texture. Store glazed donuts in an airtight container at room temperature for up to 2 days.
