Ingredients
  

  • 2 Large Salmon Fillets
  • 1 Bunch of Fresh Asparagus
  • 2 Tablespoons Extra Virgin Olive Oil
  • 1 Organic Lemo
  • 3 Cloves of Garlic
  • 1 Teaspoon Sea Salt
  • 1/2 Teaspoon Cracked Black Pepper
  • Fresh Herbs (Dill, Parsley, or Chives)

Method
 

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with a silicone mat or parchment paper.
  2. Wash and dry the asparagus, then trim off the woody ends and place on one side of the baking sheet.
  3. Rinse and dry the salmon fillets, placing them on the other side of the baking sheet.
  4. In a small bowl, whisk together the olive oil, minced garlic, lemon zest, sea salt, and black pepper.
  5. Drizzle the oil mixture over the salmon and asparagus, using a brush or hands to coat evenly. Top the salmon with thin lemon slices.
  6. Bake for 12 to 15 minutes until the salmon flakes easily and the asparagus is tender-crisp.
  7. Remove from the oven and squeeze fresh lemon juice over the dish, topping with fresh herbs before serving.
