Ingredients
  

  • 2 cups all-purpose flour
  • ¾ cup granulated sugar
  • 2 teaspoons baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon sea salt
  • 1 cup plant-based milk
  • ½ cup fresh lemon juice
  • 2 tablespoons lemon zest
  • ¼ cup melted coconut oil
  • 1 teaspoon vanilla extract
  • 1 ½ cups powdered sugar
  • 3-4 tablespoons fresh lemon juice (for glaze)
  • 1 teaspoon lemon zest (optional, for glaze)

Method
 

  1. Preheat your oven to 350°F (175°C) and grease your donut pan.
  2. In a large bowl, whisk together all-purpose flour, granulated sugar, baking powder, baking soda, and sea salt.
  3. In another bowl, whisk together plant-based milk, fresh lemon juice, lemon zest, melted coconut oil, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and fold gently until just combined.
  5. Transfer the batter to a piping bag and fill the donut pan cavities two-thirds full.
  6. Bake for 10-14 minutes until golden brown and springy.
  7. Allow the donuts to cool for 5 minutes in the pan, then transfer to a wire rack.
  8. While cooling, prepare the glaze by whisking together powdered sugar and fresh lemon juice.
  9. Once cooled, dip the donuts into the glaze and let set.

Notes

Use fresh, organic lemons for the best flavor. Store in an airtight container for 2-3 days at room temperature or refrigerate for up to 5 days. Freeze for longer storage.
