Method
- Preheat your oven to 350°F (175°C) and grease your donut pan.
- In a large bowl, whisk together all-purpose flour, granulated sugar, baking powder, baking soda, and sea salt.
- In another bowl, whisk together plant-based milk, fresh lemon juice, lemon zest, melted coconut oil, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and fold gently until just combined.
- Transfer the batter to a piping bag and fill the donut pan cavities two-thirds full.
- Bake for 10-14 minutes until golden brown and springy.
- Allow the donuts to cool for 5 minutes in the pan, then transfer to a wire rack.
- While cooling, prepare the glaze by whisking together powdered sugar and fresh lemon juice.
- Once cooled, dip the donuts into the glaze and let set.
Notes
Use fresh, organic lemons for the best flavor. Store in an airtight container for 2-3 days at room temperature or refrigerate for up to 5 days. Freeze for longer storage.
