Ingredients
  

  • 1 ½ cups (180g) all-purpose flour
  • ¾ cup (150g) granulated sugar
  • ½ cup (45g) unsweetened natural cocoa powder
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 1 large egg, at room temperature
  • ½ cup (120ml) buttermilk, at room temperature
  • ¼ cup (60ml) whole milk, at room temperature
  • ¼ cup (60ml) unsalted butter, melted and slightly cooled
  • 1 teaspoon vanilla extract
  • 1 ½ cups (180g) powdered sugar, sifted (for glaze)
  • 3-4 tablespoons milk or cream (for glaze)
  • ½ teaspoon vanilla extract (for glaze)
  • Pinch of salt (for glaze)

Method
 

  1. Preheat your oven to 350°F (175°C). Grease your donut pan thoroughly.
  2. In a large mixing bowl, whisk together flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. In a separate bowl, whisk the egg, buttermilk, whole milk, melted butter, and vanilla extract until well combined.
  4. Pour the wet mixture into the dry ingredients and fold gently until just combined.
  5. Transfer the batter to a pastry bag and pipe into the greased donut cavities, filling each about two-thirds full.
  6. Bake for 9-12 minutes, until the donuts spring back when touched.
  7. Cool in the pan for 5 minutes before transferring to a wire rack.
  8. For optional glaze, whisk together powdered sugar, milk, vanilla, and salt until smooth.
  9. Dip the cooled donuts in the glaze and let set before serving.
