Ingredients
  

  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon fine sea salt
  • 1 cup unsweetened plant milk
  • 1/4 cup melted vegan butter or refined coconut oil
  • 1 teaspoon vanilla extract
  • Non-stick cooking spray or extra oil for greasing
  • 1 1/2 cups powdered sugar (optional for glaze)
  • 3-4 tablespoons unsweetened plant milk (optional for glaze)
  • 1/2 teaspoon vanilla extract (optional for glaze)

Method
 

  1. In a large mixing bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
  2. In a separate bowl, whisk together plant milk, melted vegan butter, and vanilla extract.
  3. Pour wet ingredients into dry and stir until just combined; do not overmix.
  4. Optionally chill the dough for 15-20 minutes.
  5. Roll the dough to 1/2 inch thickness and cut into donut shapes.
  6. Preheat the air fryer to 350°F (175°C).
  7. Lightly oil donuts and place in the air fryer, cooking for 5-7 minutes until golden brown, flipping halfway through.
  8. Prepare glaze by mixing powdered sugar, plant milk, and vanilla extract until smooth.
  9. Dip warm donuts into the glaze and place on a cooling rack to set.

Notes

Ensure not to overmix the dough. Use parchment paper for easy handling. Store in an airtight container for up to 2 days.
