Method
- Preheat your oven to 350°F (175°C). Lightly grease and flour your loaf pan or line it with parchment paper.
- In a large mixing bowl, mash the ripe bananas until mostly smooth.
- Add plant-based milk and sweetener to the mashed bananas and whisk until combined.
- Gradually add self-rising flour to the wet mixture and gently fold until just combined.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 50-60 minutes or until a toothpick comes out clean.
- Let it cool in the pan for 10-15 minutes before transferring to a wire rack to cool completely.
Notes
Use very ripe bananas for maximum sweetness and moisture. Avoid overmixing the batter.
