Ingredients

  • 2-4 lbs of your choice of protein (bone-in chicken thighs, pork tenderloin, beef brisket, whole fish)
  • ½ cup high-quality dry rub or marinade
  • 2-3 tablespoons olive oil or avocado oil
  • 1 teaspoon freshly ground black pepper
  • 1-2 teaspoons coarse sea salt
  • 1 onion (optional)
  • 4 cloves garlic (optional)
  • Fresh rosemary or thyme sprigs (optional)
  • 2 cups chopped seasonal vegetables (e.g., bell peppers, zucchini, asparagus, sweet potatoes)

Method

  1. Pat your chosen protein completely dry with paper towels.
  2. Drizzle the protein with olive or avocado oil and generously coat it with the dry rub, massaging it in.
  3. Preheat your Traeger by filling the hopper with hardwood pellets, closing the lid, and setting the temperature.
  4. Chop your seasonal vegetables into uniform pieces while the Traeger preheats.
  5. Place the seasoned protein directly on the grill grates and arrange vegetables in a single layer.
  6. Insert a meat thermometer into the thickest part of your protein and let it smoke until the internal temperature reaches just below your target doneness.
  7. Increase the Traeger temperature for the last 15-30 minutes if desired to create a crust.
  8. Remove the protein from the grill and let it rest for 10-20 minutes.
  9. Slice or shred the protein and serve immediately with smoked vegetables or preferred sides.

Notes

Use fresh, high-quality hardwood pellets for the best flavor. Experiment with different types for various proteins. Allow leftover food to cool and store in airtight containers.
