  • 1/2 cup fresh cilantro, chopped

Method
 

  1. Prepare all ingredients by chopping vegetables and pressing tofu.
  2. Preheat the Blackstone griddle to medium-high heat for 10-15 minutes.
  3. Lightly coat the griddle with avocado oil.
  4. Cook the cubed tofu until golden brown, about 3-5 minutes per side.
  5. Add denser vegetables like sweet potatoes and broccoli to the griddle.
  6. After a few minutes, add softer vegetables like zucchini and mushrooms.
  7. Combine all ingredients and add marinades, tossing to infuse flavors.
  8. In the last minutes, add fresh spinach and cook until just wilted.
  9. Serve warm, garnished with cilantro.
