Method
- Preheat your oven to 325°F (165°C).
- Place the ham on a rack inside your roasting pan with the flat side down.
- Add about half a cup of water or apple juice to the bottom of the pan.
- Cover the roasting pan tightly with aluminum foil.
- Bake the ham for approximately 15 minutes per pound.
- While the ham bakes, combine the brown sugar, mustard, vinegar, and cloves in a small saucepan over medium heat and whisk until smooth.
- About 30 minutes before cooking time ends, remove the ham from the oven and take off the foil.
- Increase the oven temperature to 400°F (200°C).
- Brush the prepared glaze over the ham and return it to the oven uncovered.
- Bake for another 20 to 30 minutes, basting halfway through.
- Remove from the oven when the glaze is dark golden and bubbly.
- Allow the ham to rest for at least 15 minutes before carving.
Notes
For a moist ham, cover with foil during initial cooking and allow it to rest after baking. Scoring the surface of the ham in a diamond pattern helps the glaze penetrate.
