- 150g (5 oz) dark chocolate (70% cocoa or higher)
- 100g (½ cup) unsalted butter
- 100g (½ cup) granulated sugar
- 2 large eggs + 2 egg yolks
- 30g (¼ cup) all-purpose flour
- 1 tsp vanilla extract
- Pinch of salt
- Butter & cocoa powder (for greasing ramekins)
Instructions
- Preheat the oven to 425°F (218°C). Grease 4 ramekins with butter and dust lightly with cocoa powder.
- Melt the chocolate and butter together in a heatproof bowl using a microwave (20-second intervals, stirring) or a double boiler until smooth.
- Whisk eggs and sugar in a separate bowl until pale and slightly thickened.
- Combine the melted chocolate mixture with the eggs, then add vanilla extract and a pinch of salt.
- Gently fold in the flour until just combined. Avoid overmixing.
- Divide the batter evenly into the prepared ramekins.
- Bake for 10-12 minutes until the edges are set but the center is slightly jiggly.
- Let the cakes rest for 1-2 minutes, then run a knife around the edges and carefully invert onto plates.
- Serve immediately with vanilla ice cream or chocolate-covered strawberries.
Notes
- For a more intense flavor, use high-quality Belgian or Ghirardelli chocolate.
- No ramekins? Use a well-greased muffin tin instead.
- Want to make it ahead? Prepare the batter and refrigerate for up to 24 hours before baking.
- Gluten-Free? Swap all-purpose flour for almond flour or gluten-free baking mix.
