Ingredients

  • 150g (5 oz) dark chocolate (70% cocoa or higher)
  • 100g (½ cup) unsalted butter
  • 100g (½ cup) granulated sugar
  • 2 large eggs + 2 egg yolks
  • 30g (¼ cup) all-purpose flour
  • 1 tsp vanilla extract
  • Pinch of salt
  • Butter & cocoa powder (for greasing ramekins)

Instructions

  • Preheat the oven to 425°F (218°C). Grease 4 ramekins with butter and dust lightly with cocoa powder.
  • Melt the chocolate and butter together in a heatproof bowl using a microwave (20-second intervals, stirring) or a double boiler until smooth.
  • Whisk eggs and sugar in a separate bowl until pale and slightly thickened.
  • Combine the melted chocolate mixture with the eggs, then add vanilla extract and a pinch of salt.
  • Gently fold in the flour until just combined. Avoid overmixing.
  • Divide the batter evenly into the prepared ramekins.
  • Bake for 10-12 minutes until the edges are set but the center is slightly jiggly.
  • Let the cakes rest for 1-2 minutes, then run a knife around the edges and carefully invert onto plates.
  • Serve immediately with vanilla ice cream or chocolate-covered strawberries.

Notes

  • For a more intense flavor, use high-quality Belgian or Ghirardelli chocolate.
  • No ramekins? Use a well-greased muffin tin instead.
  • Want to make it ahead? Prepare the batter and refrigerate for up to 24 hours before baking.
