  • ½ teaspoon black pepper
  • 1 tablespoon olive oil
  • ¼ cup grated Parmesan cheese (optional)
  • 1 tablespoon chopped fresh parsley (for garnish)

Instructions

  • Sear the Sausage: Heat olive oil in a large skillet over medium heat. Add the sliced andouille sausage and cook for 3-4 minutes until browned. Remove and set aside.
  • Sauté the Vegetables: In the same skillet, add diced bell peppers, chopped onion, and minced garlic. Cook for 2-3 minutes until softened.
  • Toast the Rice: Stir in the uncooked rice, Cajun seasoning, smoked paprika, salt, and black pepper. Let it toast for about 1 minute to enhance the flavor.
  • Add Liquid & Simmer: Pour in the chicken broth and return the sausage to the pan. Stir, bring to a simmer, cover, and cook for 15-18 minutes until the rice is tender.
  • Make It Creamy: Stir in the heavy cream and let it simmer for another 2-3 minutes until thick and creamy.
  • Final Touches: Turn off the heat and sprinkle with grated Parmesan cheese (if using). Let it sit for a minute before serving. Garnish with fresh parsley.
