- 12 oz andouille sausage, sliced
- 1 cup long-grain white rice, rinsed
- 2 cups chicken broth
- 1 cup heavy cream
- 1 cup bell peppers (red & green), diced
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 2 teaspoons Cajun seasoning
- 1 teaspoon smoked paprika
- ½ teaspoon salt (adjust to taste)
- ½ teaspoon black pepper
- 1 tablespoon olive oil
- ¼ cup grated Parmesan cheese (optional)
- 1 tablespoon chopped fresh parsley (for garnish)
Instructions
- Sear the Sausage: Heat olive oil in a large skillet over medium heat. Add the sliced andouille sausage and cook for 3-4 minutes until browned. Remove and set aside.
- Sauté the Vegetables: In the same skillet, add diced bell peppers, chopped onion, and minced garlic. Cook for 2-3 minutes until softened.
- Toast the Rice: Stir in the uncooked rice, Cajun seasoning, smoked paprika, salt, and black pepper. Let it toast for about 1 minute to enhance the flavor.
- Add Liquid & Simmer: Pour in the chicken broth and return the sausage to the pan. Stir, bring to a simmer, cover, and cook for 15-18 minutes until the rice is tender.
- Make It Creamy: Stir in the heavy cream and let it simmer for another 2-3 minutes until thick and creamy.
- Final Touches: Turn off the heat and sprinkle with grated Parmesan cheese (if using). Let it sit for a minute before serving. Garnish with fresh parsley.
- Serve & Enjoy: Plate the dish and serve warm.
Notes
- For a spicier dish, add ¼ teaspoon cayenne pepper or extra Cajun seasoning.
- If using brown rice, increase the cooking time by 10-15 minutes and add ½ cup extra broth.
- Swap heavy cream for coconut milk for a dairy-free version.
- Store leftovers in an airtight container in the fridge for up to 3 days. Reheat with a splash of broth or cream.
