Ingredients
2 cups sweet pickles, finely chopped
1/4 cup white vinegar
2 tablespoons granulated sugar
1 teaspoon salt
1/2 teaspoon mustard seeds
1/2 teaspoon celery seeds
1/4 cup water
4–5 drops green food coloring (adjust for desired neon-green shade)
Optional: 1 teaspoon fresh dill or diced jalapeños for added flavor
Instructions
Chop the Pickles: Finely chop the sweet pickles using a food processor or a sharp knife. Set aside.
Prepare the Base: In a medium saucepan, combine the white vinegar, sugar, water, and salt. Heat over low heat, stirring until the sugar and salt dissolve completely.
Add Spices: Stir in the mustard seeds and celery seeds for added flavor.
Simmer the Pickles: Add the chopped pickles to the saucepan and simmer for 5-7 minutes, allowing the pickles to absorb the flavors.
Add Food Coloring: Remove the mixture from heat and stir in the green food coloring until the relish reaches the desired neon-green shade.
Cool and Store: Let the relish cool to room temperature, then transfer it to an airtight container or jar. Refrigerate for up to two weeks.
Notes
For a spicier relish, add diced jalapeños or a splash of hot sauce.
If you prefer a chunkier texture, chop the pickles by hand instead of using a food processor.
Store the relish in sterilized jars for longer shelf life.
