Instructions

  1. Chop the Pickles: Finely chop the sweet pickles using a food processor or a sharp knife. Set aside.

  2. Prepare the Base: In a medium saucepan, combine the white vinegar, sugar, water, and salt. Heat over low heat, stirring until the sugar and salt dissolve completely.

  3. Add Spices: Stir in the mustard seeds and celery seeds for added flavor.

  4. Simmer the Pickles: Add the chopped pickles to the saucepan and simmer for 5-7 minutes, allowing the pickles to absorb the flavors.

  5. Add Food Coloring: Remove the mixture from heat and stir in the green food coloring until the relish reaches the desired neon-green shade.

  6. Cool and Store: Let the relish cool to room temperature, then transfer it to an airtight container or jar. Refrigerate for up to two weeks.
