Instructions
Step 1: Prepare the Crust
- Preheat oven to 325°F (163°C). Line a muffin tin with cupcake liners.
- In a bowl, mix graham cracker crumbs, melted butter, and sugar until combined.
- Press about 1 tablespoon of the mixture into each muffin cup.
- Bake for 5 minutes, then let cool while preparing the filling.
Step 2: Make the Cheesecake Filling
- In a mixing bowl, beat cream cheese and sugar until smooth.
- Add egg, vanilla extract, and sour cream, then mix until fully incorporated.
- Spoon the mixture into the muffin cups, filling each about ¾ full.
Step 3: Bake & Chill
- Bake for 18-20 minutes, or until the center is slightly set.
- Remove from oven and let cool to room temperature.
- Refrigerate for at least 2 hours before serving.
Step 4: Add Toppings & Serve
- Before serving, top with whipped cream, fresh fruit, or chocolate drizzle.
