  • 1 cup granulated sugar

  • 2 large eggs

  • 1 teaspoon vanilla extract

  • 1/3 cup unsweetened cocoa powder

  • 1/2 cup all-purpose flour

  • 1/4 teaspoon salt

  • 1/4 teaspoon baking powder

For the Cookie Layer:

  • 1/2 cup (1 stick) unsalted butter, softened

  • 1/2 cup granulated sugar

  • 1/4 cup packed brown sugar

  • 1 large egg

  • 1 teaspoon vanilla extract

  • 1 1/4 cups all-purpose flour

  • 1/2 teaspoon baking soda

  • 1/4 teaspoon salt

  • 1/2 cup chocolate chips

Optional Add-Ins:

  • Chopped nuts (e.g., walnuts, pecans)

  • Caramel swirls

  • Sea salt flakes

  • White chocolate or butterscotch chips

  • Candy pieces (e.g., M&Ms, Reese’s Pieces)

Instructions

  1. Preheat the Oven: Preheat your oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper or grease it lightly.

  2. Make the Brownie Layer:

    • In a microwave-safe bowl, melt the butter and let it cool slightly.

    • Stir in the sugar, eggs, and vanilla extract until smooth.

    • In a separate bowl, whisk together the cocoa powder, flour, salt, and baking powder.

    • Gradually mix the dry ingredients into the wet mixture until just combined. Set aside.

  3. Make the Cookie Layer:

    • In a large bowl, cream the softened butter, granulated sugar, and brown sugar until light and fluffy.

    • Mix in the egg and vanilla extract until fully incorporated.

    • In another bowl, whisk together the flour, baking soda, and salt. Gradually add this to the wet mixture.

    • Fold in the chocolate chips or any other desired mix-ins.

  4. Assemble the Brookies:

    • Pour the brownie batter into the prepared pan, spreading it evenly.

    • Drop spoonfuls of the cookie dough on top of the brownie layer. Gently spread it to cover as much of the brownie batter as possible.

    • Add optional toppings like sea salt or chopped nuts, if desired.

  5. Bake:

    • Bake for 30–35 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs. Avoid overbaking.

  6. Cool and Serve:

    • Let the brookies cool in the pan for at least 20 minutes before slicing.

Notes

  • For gluten-free brookies, use a 1:1 gluten-free flour blend.

  • For vegan brookies, substitute butter with vegan butter, eggs with flax eggs or applesauce, and use dairy-free chocolate chips.

  • Store brookies in an airtight container at room temperature for up to 3 days or freeze for up to 3 months.
